Cabbage Pumpkin and Bacon Soup

I was in the mood to cook today and after looking through our fridge, freezer and cupboards, I came up with a soup that I even surprised myself with. It was so good! So I thought I might share it if anybody is interested...


Cabbage, Pumpkin and Bacon Soup

Serves 8 Calories: approx 165 per serving



Ground Turkey – ½ pound (could substitute ground sausage)

Yellow Onion- 1 medium

4 cups of water

Canned pumpkin- 12 oz (be sure it’s not pie filling but 100% pumpkin)

Russet potatoes- 3 medium, diced

Minced Garlic-to taste, about 1 tablespoon

Sugar- 1 Tbls (optional) (I actually used 2 packets of splenda)

Rosemary- 1 tsp

Thyme- 1 tsp

Paprika- 4 tsp

Sea salt- 3 tsp

Black pepper, ground

Chicken bouillon cubes- 2

Diced, green chilies- 1 7-ounce can

Bacon, 8 slices, cut into small pieces ( I used regular but you could use turkey bacon instead)

Cabbage, ½ of a large head, sliced in ribbons





In a large pot brown the ground turkey, then add in the onions, cooking until translucent.

Add in the water, pumpkin, potatoes, spices and bullion, boil about 15 minutes on medium.

Add green chilies.

Brown the bacon in a separate pan, draining off the excess grease. Add to the large pot.

Reduce heat to low, cover and simmer for about 30 minutes. Add cabbage in during the last 15 mins.

    I would have NEVER put that one together... Sounds like a great fall soup.
