Blueberry Pudding-style Dessert

Ok, I'm not sure if Pudding is the right term because that's an American thing, over here in Ireland I would probably call this something closer to Cheesecake (the refrigerated kind, not the baked one..wow there are so many differences in our food!! :laugh: )

Anyway, my friend made this for me last night and it was so good I felt like I was totally breaking the rules.. but it comes to under 100cals per serving! So here it is:

1 cup blueberries
4oz (1/2 pack) of Philadelphia Extra Light Cream Cheese
150g (1 small tub) of Low Fat Yoghurt - any flavour it's up to you - we used Glenisk Vanilla
1 lemon (just the rind of it)
1 tsp honey (we used Acacia but you can use any variety)

This is easy peasy - just mix up the cream cheese, yoghurt, lemon rind and honey with an electric mixer (or just a fork and some elbow grease!). Then put some the blueberries in a nice glass, pour over the puddingy mixture, and finish with a layer of blueberries. And voilá! You can eat it straight away like we did, or leave it in the fridge over night and it would probably set a bit more and the texture would be nicer.
