My question is about potato pancakes...they are 90 calories for 3 of them. Pretty small. But fried in vegetable oil, how much should I increase the calorie count? Thank you!

Just add the amount of oil you're using in your food diary, that'll tell you.

But I'm in favour of a properly seasoned cast iron pan, it'll cook them up without any added oils and is non-stick if you pre-heat it properly before adding the food to cook.

I'd love to do it, but my boyfriend likes them this way and that's how I made them today....so I'm having it too. Guess I will have to invest in a cast iron pan and learn how to use it. I used a good quarter inch of oil and obviously can't count all the oil because it's still in the pan.

You can measure the oil you put in before you fry the food, then measure the oil after you're done frying the food...then figure out the calorie count for the missing amount of oil.
