Non-cooked vegetable dishes?

Now that summer is right around the corner, my desire to turn the stove on is quickly disappearing. Does anyone have any good recipes for salads and veggie dishes you don't have to cook? I found a new favorite snack, which is sliced cucumber with greek seasoning sprinkled on top, but women cannot exist on cucumber alone! What have you tried and liked??

  • Chopped veggie salad with Farro.. yummy..just like a big ol' pasta salad only with a ton of protein, fiber and all that good stuff.. too your favotie veggies with some cooked farrow, add a vinagrette of your choice and whala dinner :)

    Whole wheat pita and hummus stuffed with greek salad fixings is one of my favorites (feta cheese, lettuce, cherry tomatoes-don't have to chop em up! and whatever else you like best...squash, onion, carrots, etc., )

    caesar wrap- romaine, a drizzle caesar dressing, tomatoes and parmesan in warmed up or toasted lavash bread (or any low-calorie or low-carb wrap you want. ) one of my fav restaurants does this.

    Trader joe's has a delicious lentil and wild rice salad i heat up and add some black and kidney beans, and pre-roasted (cold) vegetables like zucchini to.

    I don't have recipes to offer but there are websites about eating raw foods which have some great recipes and ideas (however I wouldn't go for the raw meats some show).

    long shreds of zucchini to look as if it is pasta and then add some tiny bit of olive oil and some parmesaen and pepper and twirl and eat
