zig zag calories

So i've been on a plateau for 3 weeks now so i'm going to zig zag my calories

Monday: 1300
Tuesday: 1600
Wednesday: 1200
Thursday: 1300
Friday: 1500
Saturday: 1200
Sunday: 1400

Like that. Should the number be my NET or my calorie intake?

I am starting the shred today so I will burn around 300 calories Monday, Tuesday, Friday, Saturday & Sunday. On Wednesday, Thursday i will be going to the gym to swim & weight training so about 500 calories burnt at the gym.

This zig zagging is confusing. Please help?
