Egg Salad

For some reason, I'm really, really craving an egg salad sandwich.

Anyone have any healthier alternatives than mayo to mix up with the egg?

    Try a little plain Greek yogurt, but add relish, or celery, or chives, or other herbs/seasonings... to help balance out the flavor.

    I use the fat free Nayonnaise, which is soy based. It doesn't taste as good as real mayo, but it is a pretty good substitute.

    I was going to suggest the exact same thing-- a few spoonfuls of Greek Yogurt, celery, lemon juice, salt and pepper, maybe some scallion?

    Use greek yogurt or whatever to replace most of the mayo but also add some yellow mustard and a little vinegar for flavor without any extra calories.

    I use fat free mayo, often flavored with curry powder. Replacing some of the yolk with white or using raw/mashed tofu can cut calories a lot too.

    First off, I use a ratio of 4 egg whites and 1 egg yolk. This cuts down on calories substantially.

    Also I use Hellman's low fat mayo, grey poupon mustard and sugar free sweet relish. All low in calories and all very tasty.
