Rotiserre Chicken ideas?

I have a leftover rotiserre chicken & i'm not sure what to do with it for dinner? Anybody have low-cal recipes that I could use the chicken in or any ideas/tips? Thanks!

Homemade "Fried Rice":
-Make four servings ahead of time, put into small Tupperware containers and heat up for lunch. Pair with an apple or some almonds.
Ingredients:
- 3/4 pound chicken tenderloins
- 1 cup dry barley or brown rice
- 1/2 cup egg beaters
- 1 cup sweet onion, diced
- 1 cup portabella mushrooms, diced
Directions:
1. Cook 1 cup dry quick barley (or brown rice) on the stove by the instructions on the box.
2. Heat a pan on the stove (medium) and spray with nonstick cooking spray.
3. Chop up 1 cup of sweet onions and 1 cup of baby portabella mushrooms.
4. Add the veggies to the pan and let set and cook.
5. Meanwhile cook 3/4 lb of chicken tenderloins or chicken breasts. (I cook mine in the microwave, but you can also grill them or buy precooked ones).
6. Dice up the chicken.
7. Push the veggies to the side of the pan and on the other side add 1/2 cup egg beaters.
8. Cook and dice the egg beaters until done.
9. Then add the diced chicken and barley/rice (which should be done by now).
10. Combine and let simmer for a few minutes.
11. Take off the stove and let cool. Measure out into four separate containers, cover and refrigerate.
Servings: 4 (approximately 2 cups each)
- Around 250 calories per serving.
- Tons of fiber from the veggies and barley/rice.
- High in protein from egg beaters and chicken.
- Low in sodium (though you may want to top with some salt, soy sauce or garlic powder, I prefer mine plain).
- Low in fat ( Pair with a 100 calorie pack of almonds for a 350 calorie, balanced meal).

-chicken salad with light mayo and tons of veggies
-chicken wrap with lettuce, veggies and light dressing

shred the chicken
add a can of garbanzo beans
a tbsp red wine vinegar
a tbsp olive oil
cut up some greek olives
dice cucumber
dice red onion
dice tomato
mix together and enjoy! about 300 cal for 2 cups0 -
make low cal chicken salad w/ it... there are a lot of good threads on the recipe board for that0

Sheppard's Pie
I made this with Rotisserie Chicken and it was awesome. I had a bunch of leftovers and I am sure you can substitute some items for lower calorie options depending on what you are looking for.
Costco - Rotisserie Chicken Breast Meat, 0.5 container (42 oz.s ea.) 840 Cal
Peas and carrots - Frozen, cooked, boiled, drained, without salt, 0.25 package (10 oz) yields 33 cal
Corn - Sweet, yellow, canned, whole kernel, drained solids, 0.75 cup 100 cal
Morrison's - Country Style Peppered Gravy; White, 1/4 Cup Gravy 60 cal
Idahoan Instant Mashed Potatoes - Roasted Garlic, 1 container (2 cup prepared ea.) 440 cal
Idahoan Instant Mashed Potatoes Prepared - Baby Reds Flavored, 1 container (2 cups ea.) 440 cal
You need to put the veggies and chicken on the bottom of a 3 quart greased dish. Then the potatoes on top of that and finally top with gravy. I have made it many times without gravy but like I said, I had leftovers.
Also, you can top with cheese if you wish, but I didn't.
This flavorful and super yummy dish makes about 6 servings at 319 calories per serving. It is very filling also!0 -
I forgot to say that you need to bake it at 350 degrees for 45-60 min.0

This is one of my favorites...I don't have amounts...I gauge according to how many calories I have available and/or the calories/serving I'm shoot for.
Chopped rotisserie chicken (take off skin)
Grape tomatoes, halved
Feta cheese, crumbled
Walnuts, chopped
Basil (fresh chopped or dry)
Chopped/minced garlic
Lime or lemon juice
Olive oil
Spray a baking dish with nonstick spray. Toss all the ingredients and put into the dish.
Bake at 375 for about 20 minutes, or until the top is toasty.0 -

fajits! sautee up fome red peppers and onion and warm up a low carb wrap and add in some thin sliced rotiserre chicken and viola! Awesome fajitas...maybe a little low fat shredded mex cheese0 -
