Perfect for leftovers- Split Pea and Ham Soup
This is my favorite week after Easter recipe.
2 cups dry split peas
The bone of the leftover Easter ham
Diced up ham
Diced up carrots, celery, onion and garlic (to your taste)
About 6 cups of liquid- I use 1/2 chicken broth and 1/2 water
Season with leftover ham gravy, garlic salt, regular salt, and pepper.
Mix it all together, and let it simmer or crockpot for a couple of hours. Split peas cook relatively quickly.
It is delicious and not bad on calories- you can go easy on the ham. My current version tracks at 181/cup.
