Needed something to use left over ham from Easter, and a friend suggested this. Turned out pretty good. Wish it had less sodium...but not going to happen with the ham.
Ham, Potato & Green Bean Casserole
Makes 6 (big) servings
Calories: 301 Carbs: 34 Fiber: 5 Fat: 4 Sugar: 8 Protein: 21 Sodium: 666
Ingredients
16 oz bag (frozen) - Cut Green Beans
1 Tbsp - Butter/ Margarine
16 oz - Sliced Mushrooms (white or portobello)
1 TBSP - Garlic
1 Onion diced
1 TBSP - Flour
1 1/2 Cup Skim Milk
16oz - Spiral Sliced Ham w/ Glaze - Shredded or broken into very small pieces
3 - Russet Potatoes (20oz) - about 4 small potatoes, thin sliced (like chips)
*A mandolin or food processor comes in handy
Pre-heat oven to 400.
1) In a sauce pan melt the butter add the mushrooms, onion, and garlic, saute this for five minutes.
2) Whisk with the 1 tablespoon of flour. Whisk in the fat free milk and bring to a boil. Add the green beans and season with pepper to your liking.
3)Spray baking disk with pam, lay 1/2 the slices of potatoes on the bottom. Then top with 1/2 shredded ham. Then 1/2 the green bean & mushroom mix. (your making layers)...and repeat layering with remaining mixes.
Cover and bake for 30 minutes. (pull a potato from a corner to make sure its cooked all the way....if not cook for another 10-15 min)

Ya it was pretty yummy. I actually really liked the potatoes in it...I might do at in my green bean casseroles. It was good. haha0
