Super Pasta Al Forno w/ Veggies

Just recieved this receipe from my EAT WELL LIVE WELL newsletter. The nutrition info was posted w/ the receipe.

Total time 1 hr

Each serviing (2 cups) = 450 calories
51 g carbs (7 g fiber)
18 g protien
21 g fat (6 g saturated)
20 g cholesterol
240 omega 3 fats
410 sodium

INGREDIENTS
1 pkg wheat penne rigate pasta (cooked per instructions on pkg)
2 pkgs sliced baby bella mushrooms
1 pk cut cauliflower florets
1/4 cup basting oil w/ salt pepper to taste
1 cup Parmesan cream sauce
2 cups creamy mushroom soup
1 1/2 Sweet peas
1 lemon zest (1 -2 tbspn)
1 pkg fresh thyme (chopped & stems removed)
3/4 Shredded parmigiano
2 tbsp black truffle extra virgin olive oil
1/2 cup wheat panko crumbs

Toss mushrooms, cauliflower & basting oil in bowl. Season to taste. Spread on baking sheet in single layer. Roast 30 min until mushrooms are blowrned. Remove from oven (oven temp 375)

Rinse cooked pasta and transfer to large mixing blowl. Add mushroom & cauliflower mix, cream sauce, soup, peas, zest, thym & cheeese with truffle oil. Stir together. Season to taste

Add pank crumbs. Remaining 2 tbsp bsting oil and 1/2 cup cheese to small bow. Stir

Spray braising pan & transfer pasta mix to pan. Top with Panko crumbs

Bake 1 hour or until thouroughly heated. Top must be golden brown
