Currently, I am on Coumadin. So eating greens is a no-no, which makes healthy food choices really difficult since all the good stuff is green.
Anyone have any good suggestions on other veggies to explore? Or does anyone have a good way to balance out the greens without taking massive amounts of Coumadin.
I've been trying to incorporate Sweet Potatoes & Carrots . . . but I am stuck!!

it may take me a bit to find the list as I have to dash out the door.. but when my husband was on it we had to be careful as he was on such a high dose (13mg) and I found a great resource... but i don't have it bookmarked anymore.

You could try, Radishes, Beets, Mushrooms, Purple Cabbage, Eggplant, Corn, Parsnips (with sweet potatoes roasted are great!), Cauliflower.
I bet some roasted mushrooms, parsnips, and sweet potatoes with garlic and onion would be a great side to a roast chicken or something. Hope this helped Good luck!0 -
We are totally on the same boat, although I am on Coumadin for life. I honestly just avoid them as much as possible, because it does change your INR with even small doses. So I eat more carrots, asparagus, spaghetti squash, tomatoes (I am addicted to them). I may eat some vitamin k once a week, but only a small serving. I only get blood tested once a month now so I have some room to play...how often do you get your INR checked?0

Red potatoes roasted with rosemary and thyme would be good.
Can you have all fruits? You could incorporate a fruit salsa (I have a mango, pineapple, red onion, cilantro, and jalepeno recipe that I LOVE) to go with roasted chicken.0 -
I would suggest doing some research and chat with your physician about is it necessary to restrict green veggies because of Vit K intake interfering with warfarin. This article talks about steady contribution of leafy greens can help stabilize INR fluctuations.
