This is a recipe from Hungry Girl that I have tweeked a little bit with a few different ingredients (it was a blueberry scone recipe)
Makes 4 scones, 110 calories each!
1/3 Cup of Heart Smart Bisquick Mix
2/3 Cup of uncooked oatmeal
2 packets of Splenda
2 teaspoons light buttery spread (like Smart Balance Light buttery spread w/flax or Brummel and Brown)
1/2 teaspoon baking powder
1/3 cup of unsweetened almond milk (like the kind by Silk or Blue Diamond Almond Breeze)
1/2 teaspoon vanilla extract
1/2 medium banana, chopped into tiny pieces
Preheat oven to 400 degrees. Combine all ingredients EXCEPT for bananas in a bowl and mix very well. Then gently mix in the bananas. Lightly spray a baking sheet with nonstick spray. Form 4 mounds onto baking sheet, making sure there is enough room between each because they will expand. Bake for 10 mins and enjoy!

Do you have the fat, sugar, sodium breakdowns too? I love cream scones and have not had one in soooo long!0

Thanks for sharing! I love Hungry Girl! I was looking for a low-cal scone recipe because I wanted to make tea and scones to watch the Royal Wedding with my kids. (I think it starts at 5 a.m. our time. Thank goodness for DVRs!) Gotta have those and some cucumber sandwiches, I think. :flowerforyou:
I may make the blueberry ones, too.0 -
