Does anybody know any good vegan recipes for packed lunches? I'm going back to college soon, and I'd much rather have my own food, but I've never been good with packed lunches! I can never think of anything good to go in them; any ideas would be great!

Hummus with raw veggies, peanut butter and banana, not sure if you eat cheese, but string cheese is a staple for me when I need to pack something.0

In college I usually just stuck an almond butter and jelly sandwich in my bag. You might want to check out the vegan lunchbox blog for a TON of ideas.0

Hi! I just got a cookbook called Appetite for Reduction by Isa Moskowitz that's totally vegan, super healthy, and I've loved everything I've tried so far (seriously; I swear I don't work for the publishing company or something lol). Anyway, there are lots of things you could take as leftovers there if you have microwave access (stir frys, lentil burgers with salsa, etc.) - or quick put-together ideas again, if you have micro. access (like quinoa, broccolli, and one of a million sauces she has recipes for all mixed up). Or maybe falafel? They're always good room temp. Whole wheat sandwich with natural peanut butter and banana, or sliced strawberries? Salads work well as long as the dressing is on the side until lunchtime. Trail mix (nuts, dried (unsweetened) fruit, seeds), fruit, etc. is always good too.
Good luck back at college!0 -
You must be British to have never had peanut butter. I've heard it's an acquired taste if you didn't grow up with it like we do here in America.0

I found a fantastic book called "The Vegan Lunch Box". I love it! I think it might be just what you're looking for.0

i was vegan when i was at uny. i found you could get most stuff from health stores, such as vegan cheese, but these days i see a lot of the veggie stuff in supermarkets is also vegan. you needs to get out their and read some lables, i recon you could find loads of alternatives.0
