Butternut and Celeriac Mash

I was running a bit low on the veggies tonight so had to improvise. I really enjoyed this so I hope someone else will too :happy:

Nutritional Info

96 calories : 23g carbs : 0g fat : 2g protein : 4g sugar : 84mg sodium

Ingredients (makes a generous serving for 1 person)

About a 1 cup Butternut Squash
About half a cup of Celeriac
Dash of Black pepper


Chop your squash and celeriac into cubes and pop them into a pan with water/steamer. You could also roast with a spritz of olive oil, i'm guessing for around 25 minutes or so. Once soft enough to put a knife into (but not falling apart) remove from pan and drain if necessary.

Mash 'em, or if you have a ricer you could rice them for a smoother more potato like consistancy. Add in a dash of black pepper to taste and serve!
