Spaghetti Squash--Alien vegi??

Ok--so today I stepped out boldly where no one has gone before (at least no one in my house!) and bought a spaghetti squash.

Threw it in the micro and just freaked out when I ran a fork through it and it shredded just like spaghetti! TOOOOOOO WEIRD!

Then, I threw it in a fry pan with some garlic and onions I had sauteed and threw in a little olive oil then threw on some Parmesan--OMG! It tasted just like spaghetti!

Then, I entered it in my food dairy and 100 grams of it only has 27 calories and 6 carbs!!!

27 calories and 6 carbs for a bowl of the stuff!!! (well, add in the olive oil and Parmesan of course)

but I mean, come on--that's just ridiculous low cal!!

It has to be from out of space, right? Not of this world for sure--looks weird, shreds, weird, and low cal. Nope, can't be from this world!

    I have never tried that, but I love spaggetti, and I've tried everything to lower the cals in it, like switch to whole grain pasta, and use less sauce...I will definatly have to try that one...Thanks!!!

    Isn't great-I have also tried Acorn and Butternut Squash. I don't know any great recipes, so I had it plain with a little salt and dried Aji chili seeds.

    It was such a success for me that I am branching out to Eggplant this week! Very excited!

    spagetti squash is a favorite in our house. Depending on the topping I choose to use - depends on how long you cook it in the microwave. Boiling takes wayyyyyy too long - microwaving is the best (about the only reason I own a microwave is to make this!!)

    LOL love the Alien picture! Fan-frickin'-Tastic! :) I love spaghetti squash, I use it mixed with regular spaghetti and sauce...bulks up a plate of pasta without bulking up the calories. The way u made it sounds tasty too, I'll have to try it!

    Like I said, all I did was cook some onions and a thinly sliced garlic glove in a fry pan for a few minutes first--then threw in the spaghetti squash shredded stuffings, 1/2 tblspn. olive oil, and mixed it for just a minute or so. Dumped in bowl, threw couple tablespoons of Parmesan on top, and that's it!

    The squash I cooked in the micro--1/2 of a squash took about 6 minutes or so.

    I am going to have to try this.... sounds too good to believe it.. I LOVE spaghetti.

    I even glanced at some recipe on the 'net for using spaghetti squash to make pizza crust! Not too sure about that one though.....

    Found one, too, using it called "Lasagna in a Bowl"--you alternate scoops of spaghetti squash stuffings with ricotta cheese, sauce, and meat (or whatever you use for lasagna) and there you have it!

    My DH even liked it--said I should cook it maybe 30 seconds more in the micro though--it was a little shy of Al Dente (how do you spell that??) for him.

    Yeah, I was pretty freaked the first time Ezzie brought some home. I don't think it's a pasta substitute, but I do enjoy this other worldly delight.

    Hmm, geeee-not sure. I hope someone with kids answers because I don't have any. I bought a medium size one and used 1/2 for each meal for just me. 1/2 of it gave me like 7-8 ounces of "spaghetti
