What am I doing wrong? Starvation mode???

Greetings MFP!
Up until about a week ago my "daily workout(s)" consist of about 3-4 miles of walking at work and another 3-5 miles walking my dog in the evening. It has been a workable plan that I'm more than happy with. Up until last week my daily calorie intake has been 1850 though I updated to 1800 starting this week.
Last week I was on vacation and though I did my usual daily walks I did eat a lot more... that's fine. I knew what I was doing and no regrets.
This week I am doing a hike in the evening, it's about 4 miles with lots of hills... the 1st 10 minutes is up a steep hill that does nothing but make you curse everything and anything in life! With the hiking, I am consuming 1900-2100 calories and I am drinking more water than usual.... but my daily net calorie count is like this 623, 250, -123...
Am I eating too little for the hiking I am doing or could the hiking calorie count really so off that it is really not making up for the extra food I am eating? Quite frankly I don't feel any more hungry (last night after my hike I was not even hungry but ate because I would have been negative calorie count) so I am wondering what I am doing wrong?
I have lost 3lbs of the 8lbs I gained last week, BTW. I guess I expected I would have lost more. Maybe I am just still delirious from that *@$!*$# hill I've been walking up!
