help! i love cooking but i like to keep it as simple as possible. does anyone have any quick meals to share? salad and chicken recipes would be really helpful (my diet is pretty close to paleo)

    Salad:
    mix-
    2 cups lettuce of choice
    1/4 cup black beans
    chooped tomato
    chopped avocado
    chopped cilantro
    Squeeze/zest of lime with salt and pepper to dress

    Easy Salsa Chicken:

    1 tbsp vegetable oil
    4 boneless skinless chicken breasts
    Pinch salt
    Pinch freshly ground black pepper
    1.5 cups of salsa
    1 cup shredded nacho cheese blend


    Heat oil over medium high heat, brown chicken on both sides until lightly browned but stll pick inside; season chcken with salt and pepper and add salsa. REduce heat and simmer for about 15 minutes or until chicken is no longer pink inside. Sprinkle each chicken breast with cheese and cook until melted.

    I usually serve this with brown rice and fresh veggies.
  • mmm sounds great! i've recently discovered the wonder of salsa. i've found that salsa mixed w 2 tbs of sour cream makes a great substitute for southwest dressing. thanks guys : )

    My meals are generally easily thrown together...

    Had a delicious salad today: bed of arugala and alfalfa sprouts topped with roasted eggplant + mushrooms, topped with red pepper hummus and some crumbled feta cheese. SO good.

    Another great combination is BBQ sauce and hummus- sounds weird, but it's delicious- last night's dinner was chicken baked in BBQ sauce (I use a Walden Farms one) topped with a dollop of hummus, with roasted butternut squash, zuchinni and eggplant on the side (and then had leftover roast veg for today!)

    Stir-fries are easy and simple- veg, protein (shrimp/chicken are perfect), a sauce (I use a sugar free teriyaki, but soy + chilli sauce is good too!) and noodles- I like soba or udon, and cook them with a bunch of bean sprouts to bulk out the portion.

    Crumbled veggie burgers + spaghetti sauce is a great topping for spaghetti or spaghetti squash...or as sloppy joes/on a baked sweet potato.

    Another favorite is cooking a small portion of wholewheat pasta with a bunch of ribboned veg added in (ie, cut in noodle-like strands- zuchinni/squash work really well, but add as much veg as you want) and once drained, return to pot with some fat free cream cheese and pesto, then stir to combine. I usually add cooked chicken.

    My go-to meals are generally roasted veg (squash, mushrooms, cauliflower, asparagus- whatever I can get that looks good) on a bed of spinach, with grilled chicken and some sort of condiment- the possibilities are ENDLESS! Throw in some chickpeas and top with tzatziki, or some kidney beans and top with salsa, or cook the chicken with cranberry sauce to glaze and add goats cheese to the salad...

    Ok this one is easy but not the quickest

    Turkey Stuffed Eggplant

    1 lb ground turkey
    2 Eggplants
    mushrooms
    onions
    any other veggie you want to add to the mix (we put in jalapeños, spinach would be good too)
    bread crumbs
    season however you want. I added Worcestershire sauce to the turkey, salt, pepper.

    preheat oven to 400. Cut eggplant in half lengthwise, and use a melon baller to scoop out the pulp into a bowl. Leave 1/2 inch thicks sides, careful not to puncture the skin. stick the 4 eggplant shells into the oven for 20 min.

    Brown the turkey, seasoning as you like. Add the Onions, and other veggies, including about 1/2 of the eggplant pulp you scooped out.

    When eggplant shells have been in for about 20 min, pull out and carefully fill each of the shells with the turkey/veg mixture. Sprinkle with breadcrumbs.

    Pop back in the over - 10 to 15 minutes. They are done when the shell is easily cut.

    I served w/ brown rice, and added a wedge of laughing cow swiss to mine. Plain greek yogurt would be a good topping too.

    YUM!

    280 calories per 1/2 eggplant (not counting rice) using 93/7 turkey.
