Quinoa Breakfast Skillet
Just came up with this and it's delicious!
2 large whole eggs
2 large egg whites
4 Tbsp salsa
4 links Jones All-Natural Turkey Sausage, thawed and sliced into rounds
100g cooked quinoa
1/4 cup shredded cheese (I used swiss)
Beat the eggs and egg whites together. Pour them into a frying pan or skillet on medium-low heat and scramble with the sausage and quinoa. When the eggs are mostly solid, add the cheese and salsa. Stir until well-mixed and warm.
I'm not providing nutritional info because it will vary depending on the salsa and cheese you use, etc. The version I just made was 504 calories (32 carbs, 25 fat, 52 protein, 1277 sodium). It's my big meal for the day, so I don't mind if it's not exactly "low calorie."
To reduce the fat, use just all egg whites and substitute low- or no-fat cheese. To reduce the sodium, use fresh tomatoes and onions instead of the salsa. I imagine a lot of modifications would be really good!
