Balsamic Vegetables

This isn't really a recipe but I eat this for lunch and dinner ALL the time...warning: I am obsessed with vegetables.

However much you want of:
raw Red Peppers (other colors too!)
raw Broccoli
raw Cauliflower
raw Sugar Snap Peas
raw Carrots (not baby!)

feel free to add whatever raw vegetables you desire!

Chop it all up and throw it into a bowl. Pour in 1-2 servings of Newmann's Light Balsamic dressing and mix thoroughly. Enjoy! Make as much as you want and save the rest for later. My mom always makes a huge tub of it whenever I'm home and I take it back to school with me. One of the lightest but filling meals I've ever had! It's also yummy to toast a piece of whole grain bread and put the veggies on top.

    YUM! Thanks! I am always looking for new things to take to work for lunches! And now that the weather is heating up, all of my "go-to soups" are going to be too hot!!!

    I love Balsamic vinegar! Have an of you reduced it? Makes great sauces.

    I'm not very knowledgeable, so I would definitely get someone else's opinion but I think veggies are all-around pretty guilt-free (especially raw ones), so it would be perfect for an any-time-of-day snack :) glad you guys like it!

    This is one on my favorite dishes, but I slightly roast the veggies (including asparagus) and also add minced garlic

    Mmmmmmmmm. I love anything in balsamic! I make this and throw it in the skillet with a couple of chicken breasts.. HEAVEN!
