Made it and let it cool just before bed but was too tired so I've cut the first slice and have brought it with me to have at lunch today at work. I'll check back in with a report this afternoon :)

    This cake is FANTASTIC.

It's just the right amount of pineapple (I was worried it wasn't going to be enough) to give it a hint of the pineapple flavour and the cool whip and cocount on top gave it the perfect added touch without making things too sweet. It was just right :D

YUMM! Thumbs WAY up :) Thanks for sharing, it will be a regular in my house.

I gave a piece to my husband after dinner last night. He took the first bite and made a funny "mmmmmm" noise, dropped what he was doing and turned around and said "Wow, this is REALLY good."

He couldn't believe it was a low fat/healthy dessert :) So it's definitely official... this WILL be on our regular dessert menu at home.

Okay, so here's my personal review of this recipe.....
Yummy! I think it needs to cook a little bit longer then 20 minutes though.
Mine came out looking gorgeous but totally sunk and was gummy....made it more like a giant macaroon.

I also toasted the coconut before sprinkling it on top. The cool whip cuts some of the sweetness from the pineapple.

All in all, a great recipe alternative.
