Pina Colada Cake

Pina Colada Cake - sounds yummy!
Only four ingredients are needed to make a fabulous tropical dessert. From Prevention Healthy Cooking.
prep time:10 min
start to finish:30 min
makes:16 servings
1 package (14 1/2 oz) angel food cake mix
1 can (8 oz) unsweetened crushed pineapple
8 oz fat-free frozen whipped topping, thawed
1/2 cup (2 oz) toasted coconut
1. Heat oven to 350°F. Spray a 13x9-inch baking dish with cooking spray.
2. In large bowl, stir together cake mix and pineapple. Pour into prepared baking dish.
3. Bake 20 minutes or until toothpick inserted in center comes out almost clean. Cool completely on a rack.
4. Spread whipped topping over cake. Sprinkle with coconut. Cover and refrigerate until ready to serve.

Made it and let it cool just before bed but was too tired so I've cut the first slice and have brought it with me to have at lunch today at work. I'll check back in with a report this afternoon0

This cake is FANTASTIC.
It's just the right amount of pineapple (I was worried it wasn't going to be enough) to give it a hint of the pineapple flavour and the cool whip and cocount on top gave it the perfect added touch without making things too sweet. It was just right

I gave a piece to my husband after dinner last night. He took the first bite and made a funny "mmmmmm" noise, dropped what he was doing and turned around and said "Wow, this is REALLY good."
He couldn't believe it was a low fat/healthy dessert So it's definitely official... this WILL be on our regular dessert menu at home.0 -

Okay, so here's my personal review of this recipe.....
Yummy! I think it needs to cook a little bit longer then 20 minutes though.
Mine came out looking gorgeous but totally sunk and was gummy....made it more like a giant macaroon.
I also toasted the coconut before sprinkling it on top. The cool whip cuts some of the sweetness from the pineapple.
All in all, a great recipe alternative.
