My boyfriend loves when I make pancakes for the both of us on Saturday mornings. I've been playing around with a few recipes, but can't to find one that I love. I have these ingredients on hand...
-CarbQuik Flour
-Whole wheat flour
-Almond Flour
-Oat Flour
-Stevia
-Eggs
-Fat free milk
-So Delicious Coconut Milk Unsweetened
Any suggestions on a "Healthier version" of pancakes....

We use a boxed mix for our Weekend Pancakes! Fiber One Buttermilk Mix - High in fiber and tasty too. I add Cary's Sugar Free Syrup, and Coffee for a tasty breakfast!!
1/2c of mix makes 3 pancakes
190 calories

20mg cholesterol
440mg sodium
135mg potassium
36gms carbohydrates
5 gms of fiber

1-1/2 c fresh or frozen blueberries
1-1/2 c whole wheat flour
3-1/2 tsp baking powder
4 packets (4g) powdered stevia
1/2 tsp salt
1-1/4 c skim milk
1/2 c egg substitute
3 T canola oil
In a large bowl, add the flour, baking powder, stevia, and salt. Whisk together until well combined.
Create a well in the center of the bowl and whisk in the milk, egg substitute and oil. Don't overmix. Once blended, fold in blueberries with a spatula.
Heat a nonstick griddle or skillet over medium heat. When hot, coat with cooking spray. Using a tablespoon measure, drop dollops of batter onto the griddle about an inch apart. Flip when edges dry and bubbles start to form. Continue with remaining batter.
8-silver dollar pancakes per serving (serves 4)

i dont have the recipe on hand but protein pancakes made with oatmeal and protein powder is really good. Add some sugar free jelly and you have an awesome meal.0

Here's my recipe for partial whole grain pancakes. Not quite healthy but less unhealthy than others drowned in white flour, whole milk and butter. Good for someone who wants a less unhealthy pancake but doesn't want a strong whole grain flavor and texture. Just combine wet & dry ingredients and put on a hot griddle.
Dry:
2/3 cup Spelt Flour (spelt tastes lighter than whole wheat or oat flour)
1/3 cup All Purpose Flour
1 TBSP sugar
1 tsp Baking Powder
1/4 tsp baking soda
1/4 tsp salt
Wet:
1 cup 2% milk
1/2 large egg (around 2 TBSP)
1.5 TBSP melted butter0 -
