Creamy Chicken and Mushroom Pasta

Im a huge fan of pasta and made this tonight - i did get the recipe online but i changed parts of it to suit my tastes, hope u like!!

Serves 2

150g fusilli or penne.
6 medium sized mushrooms, sliced
Low fat cooking spray.
250g (2 breasts) skinless, boneless chicken, cut into strips.
3 spring onions, finely chopped.
75g low fat soft cheese with garlic and herbs.
75ml skimmed milk.
6 cherry tomatoes, halved.
Salt and freshly ground black pepper.


Put your pasta on to cook, meanwhile, mist a frying pan with low fat cooking spray add the chicken and stir-fry until cooked. Add the spring onions and mushrooms to the chicken and cook for a further 3-4 minutes.

For the sauce, combine the milk and soft cheese and whisk until smooth. Add the cooked pasta and chicken, spring onion and mushrooms to the sauce and mix.

Salt and Pepper to taste, done.

Takes about 20mins and per serving it has the following

Fat - 9g
Protein - 43

    yum thanks for this. I havent really gotten into pasta lately but this sounds great. i was always a fan of carbonara so this could be good for me
