Bulgar wheat salad
I just made and ate a bulgar wheat salad that was quick to prepare, healthy, filling, high in fiber and tasty! A great lunch on a hot day. To make things easy for yourself and avoid eating something you shouldn't because your starved and it will take too long to prepare something healthy, cook the bulgar ahead of time and keep it in the fridge. It lasts for a long time - at least a week and can be used in a stir fry or as a replacement for rice . I cook bulgar 2 to 1 water. i.e. 1 cup bulgar, 2 c water in the microwave on med/high for about 20 min. They say it will also "cook" if it soaks in cold water for an hour or so.
Bulgar salad:
1/2 cup cooked bulgar wheat
1/2 cup canned chickpeas
1 cucumber
1 tomatoe
1/2 green onion
1 tsp. olive oil
1 Tbsp. fresh corriander chopped
s&p to taste
lemon juice to taste
garlic powder (fresh garlic would probably taste great but I'm too lazy to chop it)
Chef Paul Prudhomme's Magic seasoning salt (or other spices you like).
Enjoy.

Mmmmm bulgur (homer voice) Sounds good! I'll have to give it a try
I'm thinking this would be fabulous if you sauteed all the ingredients together with a touch of olive oil! MMM now I want some really bad...lol no chickpeas in the pantry though dammit...*making grocery list*0 -
I forgot to mention that the salad is 225 calories.
You can substitute bulgar wherever you would have used rice. It's more filling too.0 -

My grocery store has an "organic" section, or like a granola person section as I call it..lol the bulgur is in there0
