What can I have in stuffed peppers

I really love stuffed peppers but sometimes when l have them, they're quite fattening because it has mince, cheese and rice etc. l was wondering what else can l have in them that's really healthy? l don't mind chicken (not a vegetarian either!) but something that's delicious and filling. Thanks!

    i fill mine with cous cous and roasted veg topped with a lil cheese (half fat)

    I make mine with either couscous or brown rice and ground turkey and whatever veggies I have laying around. Come out just as delicious as the "bad" version!

    I also like stuffed field mushrooms and have one with red onion, garlic vegetarian mince, canned chopped tomatoes and mint. When cooked, top with a little low fat greek yogurt. This works out at only 68 cals per stuffed mushroom. Serve with salad or green veg.

    You could use the same recipe for peppers. I'm not a vegitarian but the mince is much lower in fat and doesn't taste any different.

    souns funny but on the back of th fiber one bran cereal box it says you can grind it up and use in stuffed peppers for filler and fiber!
