Montreal Chicken with Caramalized Onions

So, My grocery store (safeway) always has the big packs of chicken on sale... So I buy them freeze them and then I have servings of chicken ready to go in my freezer... this also means that my husband and I have been eating LOTS of chicken... I have been trying to find ways to change it up and last night I came up with a ridiculously tasty way to enjoy chicken...

Montreal Chicken with Caramalized Onions For Two

Ingredients:

2 Chicken Breasts (I use Eating Right) 120Calories
1 half onion
2 tbs. Olive oil
1 tsp. Brown Sugar
Montreal Chicken Seasoning (I bought a pre mixed spice in theit in the spice isle called montreal chicken seasoning)
Johnny's Seasoning (or salt and pepper)


Directions:
Take chicken breasts and sprinkle chicken with Montreal seasoning, set aside. Slice one half of onion, (dont chop or dice). Set aside. In small Fry pan add one table spoon olive oil, brown sugar, onions and a few shakes of Johnny's seasoning (salt and peper work too). Leave to sit. Don't start cooking yet. In bigger fry pan, add rest of olive oil, heat on medium heat until frying pan is hot. Add Chicken and start cooking, when it comes time to flilp chicken for the first time, turn heat on the onions. once the onions cook down pull them off the heat. (about 5 minutes) Once the pink finally leaves the chicken pull off of the heat (about 10-12 minutes). Top onions on the chicken and enjoy!

Prep time-5 minutes
Cook time-10-15 minutes!

Steam some veggies and you are good to go!

** little side note, but onions are EXCEPTIONALLY good for you.. have lots of bacteria fighters in them. Keeps ya healthy! since I found out how good they are I incorporate them in almost every meal!
