Cucumber tip ("shocking and drying them")

I worked at a restaurant for 5 years that served TONS of salads and I thought I would share this tip for cucumbers. as much as I HATED doing this every day I am glad that I learned it. If you hate your salad watery from cucumbers keep reading :) If you "shock" them (thats what my boss called it) and dry them they will last longer and you can store them separately and they will last days. You will need a large bowl, ice water, sliced cucumbers, and two towels (preferably kitchen towels that don't shed lol) Slice your cucumbers like you would for a salad (without peeling them) Place them in ice water. Let them soak in ice water for a few minutes (I stir mine around to get them really cold) Lay out your first towel and place the cucumbers separately on the towel so that they are not laying on top of each other) Take the second towel and blot them gently to remove the water. Then store in a sealed container. Thats all you do. They should last 3-4 days without getting soggy. Theres my tip. Enjoy :)

    thanks- it works with lettuce too- except just rally colmd water (i never tried with ice as lettuce hates being frozen) - dry well and then loosely roll up in damp paper towels (kitchen roll) or cheeseclothe- place in ziplock veggie bag and keep refrigerated-
