Low Calorie Snack/Breakfast =)
So recently I've been loving this recipe a lot: (I came up with it!)
-1/4 cup Egg Creations Southwestern (for protein)
-1 sheet of sushi nori, crumbled (for fibre, protein and potassium)
-1 tsp salsa (just for the taste)
-(optional) 1 cup Dole arugula with spinach, shredded (for vitamins, fibres and potassium)
-1/2 slice of PC Blue Menu swiss light cheese or any kind of cheese of your choice
Makes 1 serving.
I mix all the ingredients together (except the cheese) and stick the mixture in the microwave for about 60 seconds or when it's almost done, take it out and put in the cheese (I go with swiss for the most of the time) and microwave for another 30 seconds or until the cheese is melted. The product always comes out to be HUGE! I can't even wrap it in a slice of whole wheat bread :P but it's very fulfilling as well.
1 serving WITH a slice of weight watchers multi grain bread contains:
132 calories, 2 g fat, 1 g saturated fat, 8 mg cholesterol, 350 mg sodium, 13 g carbs, 4 g fiber, 1 g sugar, 15 g protein, 42% Vit A, 35% vit C, 19 % calcium, 24% iron.
It is extremely easy to make and totally my go-to breakfast/snack mini sandwich. It's great for those that are trying to cut down the carbs a bit and get more protein into their diet You can also change up the recipe and add in some sliced mushrooms or other veggies for different tastes!
