mmm just made this 3 days ago and still eating it.
Lean ground turkey
1/2 cup onion
2 Garlic cloves
1/2 cup pinto beans (dry)
1/4 cup black beans (dry)
1/4 cup Red kidney Beans (dry)
1/4 cup dry lentils
1 box Cambells low sodium beef broth
1 small Zucchini, chopped
1/2 cup chopped carrots
1 can of diced tomatoes
2 cups water
salt and pepper to taste.
In a slowcooker I cooked the beans on high for about two hours then rinsed and returned to cooker
Browned Ground turkey in a pot and added onions and garlic.
When Turkey cooked through add it to the crockpot along with ALL other ingredients.
Cooked all day.
SERVES: 6-8 when i entered the ingredients in database it was around 200 calories per serving. VERY low in fat nd high in fiber.
NOTE: I used dry beans to eliminate all the SODIUM you get with canned beans. - you could soak the beans over night if you do not want the hassle of rinsing after 2 hours.
