I really am having a hard time wrapping my head around what makes a meal a meal...

I grew up eating "meat and potatoes"...I have a hard time thinking that "Oh, I can just have vegetables for a meal??"

Does anyone else have this issue?

Also, can anyone share some good veggie recipes?

    Spaghetti Squash, sauteed with some olive oil, green peppers, caramelized onions and mushrooms with fresh basil and diced roma tomato on top. I usually sprinkle some reduced fat parmesan on top of that.! Perfecto!

    Also a baked potato with caramelized onions and peppers with a small dab of sour cream. Mmmmmm.

    I am a veggie lover.

    Why not just have vegetables with your meal?

    I wouldn't call vegetables a meal either. A lean protein + a (non-veggie) carb + a veggie is a real meal.

    We always had veggies as a side with our meat/potatoes. Maybe that's why I don't like many veggies, I didn't grow up with them. I'd like to change that but there are some that I just cannot do, quite a few actually.

    I'm not sure what would constitute a meal of veggies. Doesn't seem 'rounded' to me.

    Veggies can definitely be a meal. But watch out for starchy veggies. Good for you, but better if you at least incorporate non-starchy veggies into your diet. My husband pretty much only eats corn or potatoes as his "veggies" and likes to brag that he's eating lots of veggies. Not quite the same.

    I'm trying to get on board with one day a week meat-less. I usually do yogurt and berries or oatmeal for breakfast. For lunch a salad with berries and feta cheese. For dinner a meatless stir-fry (use lots of mushrooms), a veggie soup, black beans and brown rice, pear and provalone grilled cheese. There are so many things that are delicious that don't contain meat!!!!!!

    6 Servings
    Goya - Barley, 1/2 cup dry
    Wylwood Premium - Frozen Mixed Vegetables, 1 container (3 3/10 cups ea.)
    Swanson - Chicken Broth - 99% Fat Free, 4 cup
    Diane's Garden (Save-A-Lot) - Diced Tomatoes (No Salt Added), 1 container (1 4/5 cups ea.)
    Wylwood (Save-A-Lot) - Great Northern Beans (Dry), 3/4 cup dry
    Wylwood - Frozen Cut Green Beans, 2.001 cup
    Polar - ****aki Mushrooms, 4 oz
    Add Ingredient

    Per Serving: 205

    I do make this for breakfast for the week :)
