so this week has been a no gym week for me because I have something to do every evening. I finally broke my plateau and dropped 1.8 lbs so far; hasn't even been a full week! I'm not complaining but I very confused.

perhaps your body became accustomed to the exercise or maybe you were burning so many calories in your workouts and not managing to eat them back that it was putting your net calories to low, so your body slowed its weight loss.
just my opinion

Your body needs time to recover remember. And when recovering, it uses more calories. That doesn't mean take a week off every other week, but it's perfectly understandable for a week off to see improvements in weight, strength, endurance. There's a reason why athlete's taper before a big event, it ensures that their training isn't going to be tiring them out of the race/game/etc.0
