Mini Frittatas with Ham and Cheese
Mini Frittatas with Ham and Cheese
Bake these bite-sized frittatas in a miniature muffin pan. They taste great hot or at room temperature, so you can make them in advance.
Ingredients
Cooking spray
1/2 cup finely chopped onion
2/3 cup chopped reduced-fat ham (about 2 ounces)
1/3 cup (about 1 1/2 ounces) shredded reduced-fat extra-sharp cheddar cheese
2 tablespoons chopped fresh chives
1/8 teaspoon dried thyme
1/8 teaspoon black pepper
4 large egg whites
1 large egg
Preparation
Preheat oven to 350°.
Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add onion; sauté 2 minutes or until crisp-tender. Add ham; sauté 3 minutes. Remove from heat; cool 5 minutes. Combine remaining ingredients in a large bowl; stir with a whisk. Add ham mixture, stirring with a whisk. Spoon mixture into 24 miniature muffin cups coated with cooking spray. Bake at 350° for 20 minutes or until set.
Yield
8 servings (serving size: 3 frittatas)

One thing I found that helped. If you can force yourself to eat something that includes both complex carbs and protein....about mid-morning.....it seemed to help keep me feeling decent the rest of the day.
Maybe a whole grain english muffin with a little peanut butter (and maybe some sliced banana) Something like that.0 -

I will be 11 weeks on Friday (ALMOST in 2nd trimester) and my nausea has eased this past week a lot. Maybe it will be the same for you. I am still super tired and get dizzy still though!! :ohwell:0 -

This does look delicious. I think I might even be able to get my husband to eat these.
I am not sure if I am doing my math right, but if you used a regular size muffin pan, which probably has 12 sections, wouldn't that be 1 1/2 muffins is a serving if compared with the 3 mini-muffins.
So for the nutrition facts for say 2 regular size muffins would be:
Cal 58.5
Fat 1.95
Carbs 3.45
Sod 181.5
Prot 6.6
Fiber 0.6
Maybe someone can confirm my math on this.0 -

I made theses on Sunday and i ended up having to make 2 batches as my oldest daughter had a sleepover for her B-day and they ate them all i however only got 20 and 21 per batch, guess i filled the tims up to much, but anyways, they were sooo good!!

Hmm, that's strange. Here is the link again. I just go there, go to the Food part at the top and then scroll down to recipes and do a search. You can find a part that says "enhanced search" so you can narrow down what you are looking for.

I know there are links to other recipes there....through different publications. Maybe that's what happened. I don't know. I generally stick to Cooking Light recipes only.0 -
