I personally freeze lots of different recipes. Soups are easy just make what you like, cool, put a serving in a freezer bag and freeze. I make meatloaves too. I would just google how to freeze safely before you start.0

my creamy chicken enchilladas are freezable in fact I fully suggest freezing them in single sreve portions in samich bags. also Ill post the 'flex mex mix'. its hard to eat just the cup portion, its so goo & it freezes wonderfully
1 lb ground meat (I use ground turkey mmmm)
1 large onoin(I add a shallot to this mix) about a cup chopped
2 tblsp taco seasoning 1 can condensed tomato soup
2 cups shredded cheese( cheddar is great for this or 1 cup cheddar& 1 cup pepper jack)
1 cup sour cream
brown your meat & add onion(shallot) stirring often til onions are slightly tender (about 8 mins)& meat is cooked through. drain the fat, grease or moisture.
reduce to medium-low heat. Add taco seasoning & tomato soup stirring till well blended.add cheese & stir till merried(about 30 seconds). remove from heat & add sour cream.
I like this on an open stove cooked tortilla.mmmmm
keeps 4 days in the fridge & 2-3 months in the freezer.
to defrost I usually set it in the fridge over night(but my microwave don't work) ^_^
