Mandarin Chicken Pasta Salad

I needed a spot to "put" this so I can refer to it, so I figured I would also share my favorite salad recipe! YUM! It seems like a lot of items, but it is very easy to put together. It is a Pampered Chef recipe.

This is "about" what it looks like, minus the hard noodles. I don't have a photo of it on my laptop...anyway...The kids chow it down and so does hubby, so it's a keeper in my book! YUM!

Mandarin Pasta Salad
(from Pampered Chef)

Yield: 12 servings.

Dressing, mix:
1 tsp. fresh ginger root (I use dried equivalent)
1 garlic clove, minced
1/3 cup rice vinegar
¼ cup orange juice
¼ cup vegetable oil
1 tsp. sesame oil
1 envelope Lipton Recipe Secrets Onion Soup Mix
2 teaspoons sugar

Toss
8 ounces bow tie pasta, cooked, drained and cooled
½ cucumber, chopped
½ cup red bell pepper, chopped
½ cup red onion, chopped
6 ounces fresh baby spinach leaves
1 can (11 ounces) mandarin oranges, drained
2 cups cooked chicken breast, cubed
½ cup sliced almonds

Mix the dressing ingredients well and chill. When ready to serve, toss chilled salad ingredients with dressing, sprinkle on almonds and serve!

    OMG I had it for lunch again today but I added another handful of spinach. It was sooooooooooo good! I never eat left overs, so this is something for me to have it again! YUM! I will next time do half the oil to see how that changed the calories and fat. It was soooooooooooooooo good though!
