Vegan, gluten free ropa vieja

I have a dinner next week at which one of the guests is vegan and mostly gluten free (a choice, not a necessity). So I am thinking of making ropa vieja, with spaghetti squash substituting for the beef. Should I add anything to make up for the missing beef flavor?

Hey, you think this is odd, you should have seen me trying to find low carb options to plantain so that I could make a diet friendly pastelón this weekend. I failed, but am open to suggestions on that, as well. Now I am wondering if mashed cauliflower would work...

    there is a thing called match meat. its sold at whole foods market. they have several things, meat, chicken, ect vegan meats. theres also lightlife meat and also vegan meatballs. you should ask what he/she would prefer.

    you can find almost any vegan recipe if you just google it :) As for gluten free, you can get gluten free seitan or use the squash in place of :) yum!

    ahhh, I didn't realize there was gluten free seitan, since wheat gluten is one of the prime ingredients in traditional seitan!

    I know, it makes no sense... but tastes delicious! I was Vegan for a long time. I should do it again now that I have more time. I love experimenting with the new recipes!
