Low Carb Pancakes: With a mixer beat 6 egg whites til stiff and fluffy. In a food processor or blender mix: 1 c cottage cheese, 1 scoop vanilla protein powder (optional), few drops of stevia and a sprinkle of cinnamon (also opt), 1/2 c oat flour, 1/2 c almond flour, pinch of baking powder (you can also just use almond flour to cut it more, but I add the oats for fiber). Add that to the egg whites and mix on low so you don't totally un-fluff the egg whites. Cook the batter just like regular pancakes. Fairly high cals, but also lots of protein and much healthier than white flour :P Sometimes I cheat and use sugar free syrup, but these are really good with berries cooked into a compote. My kids even like these!!

    Here are my simple low carb/high protein pancakes:

    - 2 egg whites
    - 1/4 cup oatmeal
    - 1/2 scoop vanilla whey protein powder
    - 2 Tbsp applesauce
    - 1/2 tsp vanilla (optional)
    - 1/2 tsp sodium free baking powder (optional)
    - water to thin out

    Mix in a blender for about 1 to 2 minutes and scrape down the sides so it mixes thoroughly. Pour out onto a heated and sprayed griddle. Cook until bubbly then flip. Top with fruit, yogurt, syrup, honey, peanut butter :smile:

    About 180 calories for entire recipe. (Makes anywhere from 4 to 8 pancakes depending on size, heat, amount of water and whether or not you spread them out).

    Tip: Add extra water to make thin crepes or sweet tortilla substitutes.


    I've never thought about using almond flour or cinnamon in my protein pancakes. I'll have to try that! Thanks.
