low carb/high prot french toast souffle thing :)

Made this for breakfast, inspired by my recent love affair with oopsie rolls and molten lava cake.

Here's what i did:

start w/ 2 eggs, separated.

To the whites, add a pinch of cream of tartar and beat til stiff.

To the yolks add:
1 T cream cheese
1/2 scoop vanilla prot powder
few drops vanilla stevia
few drops maple flavoring
cinnamon
nutmeg
pinch of baking powder
(beat that with the mixer after you do the whites)

Fold together gently, bake at 375 for however long my shower lasted... dunno maybe 20 min or so. Then I topped it with Walden Farms calorie/carb/sugar free syrup and a side o' coffee (the Walden Farms stuff is in the diabetic section of the grocery store... full of artificial crap but it's not something I use often so I'm ok with it) High protein, solid energy for my day, which is 'bout to get crazy... but it felt like a Sat morning breakfast and my house smells fantastic :)

    I have been making the protein pancakes but I am going to give this a try!

    Smuckers makes a really good sugar free maple syrup. It has calories unlike the Walden Farms but I like the flavor better. I found it in the regular syrup section of my grocery store.
