Black Bean and Cheese Enchiladas!!

Made this recipe myself! So proud of it :)
Makes 14, serves 14
266 calories per enchilada

I know this isn't the lowest calorie recipe but it's an incredibly satisfying treat that isn't going to ruin your day's count.

Ingredients:
-1 tablespoon of olive oil
-1 Small/Med onion diced
-2 cloves of garlic, minced
-1 can of whole green chiles: Chop these up, not finely, though.
-1 15 oz can of crushed tomatoes
-1 15oz can of black beans
-Cumin and chili powder to taste (i use about 1/4 tsp each)
-2 cans of mild enchilada sauce
-14 flour tortillas - 8 inches (this recipe calculates them to be 150 calories each... you can get them as low as 60 calories each to cut 90 calories from each serving- WOW!
-2 bags of cheddar jack cheese... this is where most of the calories come from at about 125 calories a person in cheese. Worth it.

1. Saute the garlic and onion over med heat in hot olive oil until onion is soft. 2 or 3 minutes
2. Add chopped green chiles and get these mixed in with the onion and garlic.
3. Add the tomatoes, i drained off a tad bit of the liquid. mix well. If the mixture is on the thin side, add a teaspoon of flour to thicken. Saute all of this for an additional minute
4. Add a can of drained and rinsed black beans. Mix and season with the cumin and chili powder
5. You will need 2 casserole dishes. Coat the bottom of a casserole dish in enchilada sauce. Dip each tortilla into enchilada sauce before filling. ***You will use 1 can of sauce and 1 bag of cheese for each dish***
6. Fill each tortilla with a thin layer of cheese, a layer of the black bean mixture (1/4 a cup or less will do it) and another layer of cheese. Roll em up. Fit 7 or 8 to a dish.
7. Pour remaining sauce over the top of the enchiladas. Sprinkle remaining cheese (should be about a 1/2 cup) on top of the enchiladas
8. Bake in the oven at 350 degrees F for 15 minutes
