Spinach and ricotta pitta pizza!!
I LOVE pizza and came across this alternative recipe the other day. I wasn't sure it would be good enough to stop my pizza craving but it was gorgeous! What you need:
1wholemeal pitta (sliced in half).
1/4 cup of ricotta cheese
Spinach
Oregano, pepper, garlic, salt to taste.
Lay the two slices of pitta on a baking tray.
Pre heat the oven to 200 degrees C
Mix half of the ricotta with crushed garlic, oregano and salt and pepper.
Spread the mix on to the pitta.
Wilt the spinach, then place on to the pittas.
Add the remaining ricotta
(I also added mushrooms as I love them).
Cook for approx 5 minutes.
Absolutely gorgeous and only 299 calories!!
