Hello all
I work in an office, and eat my lunch at my desk most days. I'm looking for inspiration for tasty, healthy, low cal lunchbox ideas.
I am not allowed hot food- it is deemed too 'smelly' in an open plan office- plus there is no microwave.
My lucnbox regulars are:
*Tuna & salad in a ww tortilla wrap.
*Cous cous, veggies & harissa paste.
*Melba toasts & cup a soups
*Ryvita, veggies & cottage cheese.
* Quinoa salad.
Please share!

Great thread
Hummus and Pita Bread
Salad Wraps (Trader Joe's has this awesome spicy asian peanut dressing too! Yumm!)
You mentioned no hot food ... did you ever think about getting an electric tea kettle? Hot water opens the door for other stuff too, not to mention tea!0 -
i stick to the good'ole fashion p & j sadnwich and baked chips.0

I think I could eat PB&J every day and be happy! lol0 -
Half of a whole-wheat pita, a 1-ounce slice of deli turkey (oven roasted), a smear of greek vinagrette salad dressing on the inside of the pita, and as much romaine lettuce, thinly sliced cucumber, and tomato as I can cram in without busting the seams. celery with light ranch dressing is also a favorite, but it's something i sneak in during the afternoons. Beats potato chips in terms of calories, anyway, and I gotta have my crunch!0

Some good ideas so far....
I'm from the UK and the idea of PB & J sounds daunting!! Besides- isn't peanut butter high in cals/fat?
Yes, we do have a kettle and I make cup a soups & black coffee )
As far as veggie snacks go, I reallly cannot stand celery, and don't like raw carrot either- so I stick to cucumber & bell peppers for crudites.0 -

In Tesco's they do a new range of salads, all low cal at around 250 per pot, maybe you could get ideas of ones to make yourself, my favourite is a duck and noodle salad.0

Good idea- I live/work near a tesco's. Their salads used to be RIDICULOUSLY high in calories- it was all pasta, mayo and cheese. Will check out the new range.
Boots has also revamped their salads and brought out some tasty new flavours. They are bigger too!0 -
I tend to turn last night's leftovers into a wrap or salad for lunch. Over the weekend, we had tacos made with ground turkey, so this morning I used the leftover meat, added some black beans and a sprinkle of cheese threw it over a ton of lettuce. Tonight, we are a having steak and roasted veggies. Tomorrow, I'll throw that into a wheat wrap with a bit of balsamic dressing, a smidge of blue cheese and some lettuce.
I also do yogurt parfaits a lot for lunch. Low-fat Greek yogurt topped with fruit and nuts or a handful of store-bought granola. My favorite combos are banana/walnut or strawberries/raspberries/slivered almonds. Blueberries and pecans are a good combo too.0 -
Try a salad in a jar. Here is the link http://www.salad-in-a-jar.com/category/salad-in-a-jar . Really simple if you have a vacuum pack machine with a wide-mouth jar attachment.0

I am looking for new ideas too...
I make salads a fair amount. You can cook a chicken breast or shrimp the night before and add it to a salad to make it a little more filling.
Cottage cheese is good, and I slice tomoatoes and add pepper and then pair it with raw veggies and hummus.0 -
I do a lot of salads.. I prepare them on Sunday in the glad containers and they stay fresh all week.. usually lettuce, cucumber, tomato, some kind of nuts, and olives.. occasionally craisins cause i love those.. i also put some low fat shredded cheese in another small baggy to put on it. I make my own oil and vinegar dressing too
I also try to find the lowest calorie wraps i can and put either hummus or some low cal dressing and make my own turkey let. tom. roasted peppers in a wrap etc. If you get those contaners that have 3 compartmentes, I have the wrap, pickles and cut up cucumbers.. thats delicious!
Do you like eggsalad? I love it, i make it with next to no mayo though and use lots of spicy dijon mustard and a lil tobasco and put it on WW bread
hope some of these help.0 -
