My 10 year old daughter asked me to make banana nut bread so I tried my best to make it a little healthy and not "healthy tasting"... so I can have some!:wink: I cut the cals almost in half... :drinker:

1 cup all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1/2 cup I Can't Believe It's Not Butter
1/2 cup white sugar
12 packets Equal Sweetener
2 mashed overripe bananas
1 whole egg, beaten
2 egg whites
1/2 cup chopped walnuts
1 tbsp vanilla extract
1 tsp ground cinnamon
1 tsp ground nutmeg

1.Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.

2.Sift the flour, salt and baking soda into a large bowl. In a separate bowl, mix together the butter and sugar until smooth. Stir in the bananas, eggs, and walnuts until well blended. Add ground cinnamon & ground nutmeg and give it a quick stir. Pour the wet ingredients into the dry mixture, and stir just until blended. Pour into loaf pan.

3.Bake for about 50 minutes in the preheated oven, until a knife inserted into the crown of the loaf comes out clean. Let the loaves cool in the pans for at least 5 minutes, then turn out onto a cooling rack, and cool completely. Wrap in aluminum foil to keep in the moisture. Ideally, refrigerate the loaves for 2 hours or more before serving.
