    Bump - I LOVE gnocchi and would love to find a lower-cal version (also vegetarian :))

    They tase great with anything, I do mushrooms, pepers, artichoke hearts with olive oil.

    I like to boil mine and then pan "fry" it to get it crispy on the edges.
    I like mine with red sauce or pesto sauce, pine nuts and asiago cheese.
    Or publix had a recipe for a chicken florentine with gnocchi, you could make that minus the chicken :)

    For making the actual gnocchi, or stuff to put in with gnocchi? I've never done home-made gnocchi before, but I have a couple of recipes that I use store-bought gnocchi with.

    For one, I saute some onions and a variety of mushrooms with some veggie broth and white wine, thyme, basil, and a bit of rosemary. You can thicken it with some flour or corn starch. If you like creamy sauces, add some cream to it. If you've used dried mushrooms, add the mushroom soaking stock. Then I mix together and top with some toasted walnuts. Depending on what you add, it gets to be a fairly low-cal, or high-cal recipe (higher if you add lots of cream and walnuts).

    The other recipe isn't vegetarian, but I'll describe it anyways. I fry up some chicken or turkey bacon (I don't eat red meat, so no real bacon for me), and sautee some onions with lots of frozen spinach and fresh red peppers. Add to the gnocchi with some pesto... mmmm... that one is my favourite.

    Maybe some fresh veggies (tomato, onion, zucchini, broccoli, etc.)...whichever combination sounds good to you and some low-fat balsamic vinegarette? Or tossed in garlic and olive oil?

    and also I like to get mine at Sams or some wholesale club, it is WAYYY cheaper! I can get like 4 lbs for the price of a 1 lb box at a grocery store :)
