Protein Bars

The taste of bars varies mainly by the type of protein powder used... I usually buy whey, but for baking, soy seems to give a much better texture.
I love this muffin recipe:
• 1 cup wholewheat flour
• 2 servings protein powder (I bought individual sachets from Wholefoods/Trader Joe's- vanilla Spirutein worked really well!)
• 1/2 cup applesauce
• 1 TBSP cinnamon
• 1.5 TSP baking powder
• 1.5 TSP baking soda
• 2 egg whites
(I added some sweetener and vanilla too)
Mix all ingredients in 1 bowl. Make sure to break up any clumps that appear. Pour out in muffin tins till 3/4 full. Bake at 350 degrees for about 30 minutes (my oven is crazy and only took 15)
6 muffins- about 130 calories each and 8-9g protein.
