Curried Potatoes
Serves 4
210 calories per serving
1 lb potatoes, cut in bite-size pieces
2 tablespoons oil
1 tablespoon butter
2 onions, chopped
1 clove garlic, minced (optional)
2 teaspoons ground coriander
2 teaspoons ground cumin
pinch of cayenne
1 cup canned tomatoes
1 1/4 cups water
salt and pepper
chopped fresh parsley or coriander to garnish
1) Heat the oil and butter in a large saucepan and cook the onions and garlic for 5 minutes until the onions are softened and very lightly colored
2) Add the coriander, cumin, and cayenne to the pan. Cook gently for 1 minute, stirring constantly, then add the tomatoes with their juice, the water and potatoes. Season to taste with salt and pepper.
3) Cover and simmer gently for about 25 minutes, until the potatoes are tender and adjust the seasoning if necessary. Transfer to a serving dish, sprinkle with chopped parsley and serve at once.
Prep time 20 minutes, cooking time 20 minutes.
