Vegetarian Dinner! Quinoa and black beans...

So I like to eat vegetarian as often as possible and googled up a recipe from allrecipes.com Tried it and it was delish! Thought I'd share.
Quinoa and Black Beans
1 onion (chopped)
3 cloves of garlic (chopped)
1 tsp of vegetable oil
3/4 c uncooked quinoa
1 1/2 c of vegetable stock
1 tsp of cumin
1/2 tsp of chili powder or cayenne powder
salt and pepper to taste
1 c of frozen corn (I used two ears of fresh corn and scraped the kernals off the cob)
1 can of black beans
Heat the oil over medium-medium high. Add onion and garlic and cook until browned. Add quinoa then add vegetable stock as well as cumin, chili powder, salt, and pepper (I didn't add salt because stock has plenty of flavor!). Bring to a boil and then reduce to a simmer for 15 to 20 minutes or until most of the liquid is absorbed. Stir in corn and and black beans and cook until they are warmed throughout.
4 Servings
279 calories 50 carbs 12 g of protein 10 g of fiber
this would go great with something like fish tacos too!

Looks delish! I keep wanting to make quinoa, but can't find it at the store. At some point, I'm going to have to break down and go to a new store . . .:bigsmile:0

Hi all! We eat quinoa several times a week! I just wanted to remind anybody trying it for the first time to be sure and rinse the quinoa REALLY well. There is a toxin on the outside that is easily washed off and it makes it taste NASTY. Wouldn't want anyone to get a bad first impression. I noticed that not all packaging says it's pre-washed or tells you to rinse. Or if you buy in bulk, (like I do, it's cheaper!) it's almost certainly not pre-rinsed.
