Homemade Lentil Soup - 1st Try

Hello everyone,

I have been finding it very difficult to get my fill of Fiber without overloading on Salt and sugars so I am making some homemade lentil soup tonight. If it comes out edible i will share the recipe along with the nutritional info. (I feel like a mad scientist at his lab)

    OK, I just tried it and it actually tastes great !! (At least to me that is.... ) :happy:

    John's Homemade Vegetable Lentil Soup

    Ingredients
    • 1 onion, chopped
    • 1/4 cup Bertoli Extra light olive oil
    • 2 carrots, diced
    • 2 stalks celery, chopped
    • 2 cloves garlic, minced
    • 1 teaspoon dried oregano
    • 1 teaspoon fresh basil chopped
    • 1 (14.5 ounce) can crushed tomatoes
    • 2 cups dry lentils
    • 10 cups water
    • 1 9oz package Green Giant Chopped spinach
    • 1/2 teaspoon salt
    • 1/2 teaspoon ground black pepper (to taste)

    Directions
    1. In a large soup pot, heat oil over medium heat. Add onions, carrots, basil, garlic, oregano, and celery; cook and stir until onion is tender. Then let cook for 2 minutes.
    2. Stir in lentils, spinach, and add water and tomatoes. Bring to a boil. Reduce heat, and simmer for at least 1 hour.

    Serving Size is 2 cups

    The Sodium drops to 73 if you dont add that 1/2 teaspoon of salt that is in the recipe.
    I dont think it would even need it.

    Pssst... Lentil soup freezes well too! Let it cool, then portion it into ziplock bags and freeze flat. Crushed or ground red pepper adds a bit of zip if you like spicy.
