Hello everyone,
I have been finding it very difficult to get my fill of Fiber without overloading on Salt and sugars so I am making some homemade lentil soup tonight. If it comes out edible i will share the recipe along with the nutritional info. (I feel like a mad scientist at his lab)

John's Homemade Vegetable Lentil Soup
Ingredients
• 1 onion, chopped
• 1/4 cup Bertoli Extra light olive oil
• 2 carrots, diced
• 2 stalks celery, chopped
• 2 cloves garlic, minced
• 1 teaspoon dried oregano
• 1 teaspoon fresh basil chopped
• 1 (14.5 ounce) can crushed tomatoes
• 2 cups dry lentils
• 10 cups water
• 1 9oz package Green Giant Chopped spinach
• 1/2 teaspoon salt
• 1/2 teaspoon ground black pepper (to taste)
Directions
1. In a large soup pot, heat oil over medium heat. Add onions, carrots, basil, garlic, oregano, and celery; cook and stir until onion is tender. Then let cook for 2 minutes.
2. Stir in lentils, spinach, and add water and tomatoes. Bring to a boil. Reduce heat, and simmer for at least 1 hour.

Serving Size is 2 cups
Calories = 230
Total Fat (grams) = 9
Saturated (grams) = 1
Polyunsaturated (grams) = 1
Monounsaturated (grams) = 7
Trans (grams) = 0
Cholesterol (mg) = 0
Sodium (mg) = 270
Potassium (mg) = 351
Total Carbs (grams) = 35
Dietary Fiber (grams) = 15
Sugars (grams) = 6
Protein (grams) = 15
Vitamin A = 66%
Vitamin C = 22%
Calcium = 6%
Iron = 21%0 -
The Sodium drops to 73 if you dont add that 1/2 teaspoon of salt that is in the recipe.
I dont think it would even need it.0 -
Pssst... Lentil soup freezes well too! Let it cool, then portion it into ziplock bags and freeze flat. Crushed or ground red pepper adds a bit of zip if you like spicy.0
