Pumpkin muffins

I got this recipe from a weight watchers book....I have revamped it to make it perfect for me....It is SO easy and SO yummy and SO low fat and calorie!!

1 spice cake mix
1 can of pumpkin

Mix together and VOILA!!! Put into mini or regular sized muffin tins.

I add walnuts, shredded carrot, and raisins to make them like a morning glory muffin....LOVE these little things!!!!

  • Oh yes....you must bake these too ;) 350 for 10-15 minutes......

    Spice cake mix is a great idea!!!
    I made the Hungry Girl ones using a box of double chocolate cake mix and pumpkin (NOT pie filling, just plain pumpkin). Had to add a little water, about 2 TB so it would mix correctly and not be so thick.

    I've done this, it's awesome. I ususally add spices (nutmeg, cinnamon) and dried cranberries.
    Awesomely easy, my kids usually help and have a blast- and I'm not freaking out about raw egg on the floor or ceiling (yes, they have gotten raw egg on my ceiling before).
