Chocolate syrup

I really like chocolate milk and I used to use Hershey's Special Dark syrup to make mine, but it's top ingredient is high fructose corn syrup and I'm not keen on artificial sweeteners so I made a homemade syrup using stevia. It's definitely more of a "dark chocolate" syrup but for me that's great, since I love dark chocolate.

Ingredients:

1 cup water
1 cup Dutch processed cocoa powder
6 tbsp Truvia
1 tbsp vanilla extract
(optional: dash of cinnamon, nutmeg, allspice)

Put all the ingredients in a pot over medium high heat stirring constantly until it starts bubbling. Reduce heat to medium low for a few minutes and then let cool. Pour into a container and store in the fridge.

Notes: It's important to use Dutch processed cocoa powder because the alkalai take down a little of the bitterness and it makes the powder dissolve easier in the water. I included the brand name of the stevia I used because I think the sweetness level will vary. I started out adding 3 tbsp, and then 1 tbsp at a time to get the sweetness level I wanted. You'll have to experiment with that. For the vanilla extract, use pure nonimitation extract without the corn syrup added. I added some spices which gave a bit of added flavor.

I used about a tablespoon and a half with a glass of milk and found it tasty. There's a bit of that stevia aftertaste and a little bitterness which you would associate with dark chocolate. I've also added it to my morning vanilla whey protein smoothies and poured it on top of bananas for dessert. I haven't figured out the calories per serving or the amount of servings, but the overall batch came to 277 calories, and I've used it 5 times with about two thirds left. Comparitively, 2 tablespoons of Hershey's is 100 calories with 20 grams of sugar. Definitely satisfies my craving for chocolate milk without the added calories or sugar.

From a price perspective the batch I made cost about $6 (compared to a bottle of Hersheys for $2) but if I get 15 servings out of it, that's $0.40/serving.
