Any foods that derail your efforts despite maintaining calor

What I mean is, I can stay 500 calories below my goal (putting me at about 1500/day) and if I eat bread within that 1500 calories (just a slice!) my weight loss comes to a grinding halt.
In fact, most carbs do that to me... bread, rice, pasta. And just ONE day of eating that, will hold me up for a week.
Is there something to that? Biochemically in my body? Should I be focused on getting more veggies and proteins (when does that ever hurt)?
Should I try to stay away from these foods the majority of the time, because my body reacts the way it does? These aren't binge foods, either. Like I said, one slice, one cup, will do me in.
Anyone else experience this?
