Looking for a healthy and simple chicken alfredo recipe

Chicken alfredo is one of my favorite foods, but it's always loaded with fat and calories. I've found a few recipes online, but they look soooooo complicated. I'm really busy with school, work, and exercise so I don't have a lot of time, plus my cooking skills are pretty minimal, so if anyone has a tasty recipe they'd like to share that would totally make my day! :bigsmile: Thanks

    "Alfredo" Sauce:

    Melt 2 tbsp butter over medium low heat
    Whisk in 3 tbsp flour. Cook for 1 min.
    Slowly add in 3 cups 2% milk.
    Add 2 cloves garlic chopped and simmer 10 to 15 min till thick.
    Add 2 tbsp parmesan.
    Salt and pepper to taste.


    That's the best one I got.

    Try using low fat evaporated milk instead of the cream in your favorite recipe.

    I don't know if this could be of any interest to you or answers your question but I noticed a recipe for Spaghetti Squash Alfredo on the HungryGirl.com web site. Spaghetti Squash is really easy to make (Cut in half, scoop out the seeds, place halves face up in a casserole dish in about 1/2 of water, cover with aluminum foil, bake 375 degrees for about an hour). When it's cooked you just drag a fork along the inside and the squash comes right out. At around 42 calories per cup of cooked squash you can eat a platefull for around 100 calories. I personally like to cook it with salsa (also extremely low-cal). I used melted Laughing Cow cheese wedges (35 calories per wedge) with zucchini and spinach and was amazed at how flavorful it was. IF you cut out the calories you would have used on pasta you'd have more calories to use for chicken.

    Evaporated fat free milk whisked into the flour/butter and garlic is also a replacement sauce....

    Ragu has a low fat/light alfredo sauce and it is super yummy. I know its alread premade which is a huge time saver. I always just make some chicken and add a bunch of vegetables (carrots, brocoli, cauliflower) and then add the ragu and it is a quick and easy dinner

    using a spaghetti squash is a great idea! thanks! my mom made this a couple times growing up and it was actually pretty good...and it'd be a good way to add some more vegetables in my day. :D
