Springtime Bento Box (380 Calories)
Lately I've been playing around with Bento boxes. I'm discovering they're a great way to get variety and portion control. Plus they're so fun to make! They do take some time to do but hey, IMO it's worth it! And you certainly don't have to get fancy if you don't want to. ~_^
2 Servings | 380 Calories ea
1 cup Rice, Cooked (I used white)
1 Tbl La Choy Sweet & Sour Sauce
2 Large Eggs
1/2 cup Salmon, cooked (or any leftover meat/tofu)
1 Carrot, small
1 Celery stalk
2 Green Onions
1/2 cup Alfalfa Sprouts (or bean sprouts)
1/2 Tbl Red Wine Vinegar
2 Rice Paper Sheets
8 Asparagus Spears
1 Red Delicious Apple
1/2 cup Orange Juice
1 Tbl Lemon Juice
1 Chocolate Chip Wafer Cookies 100 Calorie Pack (Optional!)
Mix the cooked rice with sweet & sour sauce then set aside. Boil the eggs for 10 minutes. Meanwhile, in a small bowl mix lemon juice and orange juice. Core the apple and slice into 8 pieces then place the pieces into the orange juice mix. (If you want to cut your apples into flowers do that now and return them to the orange juice when done.) Toss occasionally to coat and set aside. Trim the asparagus and cut into 1-2" pieces. Spray generously with cooking spray, sprinkle with salt and pepper and microwave for 5-10 min or until at desired doneness.
Grate the carrot and mince the onions and celery and salmon. Spray a skillet with cooking spray then add the carrot, onions, celery, salmon and red wine vinegar. Cook until veggies are softened and salmon is warmed through. Prep rice paper according to package instructions (if boiling water is required you can use the same water the eggs are cooking in). Spoon the salmon mix into the rice wrappers and roll up. Slice in half.
When the eggs are done, let cool then peel and cut in half lengthwise. Use seaweed paper or asparagus pieces to make eyes and a mouth if you want. Remove the apples from the orange juice, discarding the juice. Divide the cookies into two portions.
If desired, arrange like so:
